Gus's challenge: Update an existing restaurant with a historic past, create a design appealing to a range of clients including families, and present a fresh design without alienating the existing customers. Research lead to a successful design. The front "diner" portion includes painted and aged wood wainscot, updated metal tile ceiling, and a new countertop evoking the original dining counter. Stools and booths were updated in new red vinyl, a nod to the original upholstery. Schoolhouse chairs provide seating in the counter and main dining areas. The bar received a makeover including custom millwork with corrugated metal, and new raised booths separate the bar from the dining area. The original neon sign was refurbished, and a custom advertising "sign" was painted on the exposed brick wall in the private dining room.
